I’m visiting my mom, in Florida, and we have been craving something sweet and satisfying that we can both eat.
For about a month now I have reduced my carbs to the amount of little to none and removed all refined sugar. I am loving it so much and have even dropped another 5-6 pounds in 3 weeks. My mom is on the ketogenic diet but is not vegan, so she compromises during our visits when eating in.
Tonight she came up with this cookie from scratch. I loved them so much that I quickly snapped a photo and hopped on to share this with you all. Here is my mom’s recipe:
1 mashed banana
1 heaping cup peanut butter
3/4 cup coconut flour
3-4 packets of stevia
Dash of salt
Preheat oven to 350. Mix all ingredients together. Roll into about a 1 inch ball and place on cookie sheet. Keep 1 inch apart from each other. With a fork slightly press down. Bake for 15 minutes.
It’s that easy! I hope you enjoy them.
You could add vegan chocolate chips or maybe a touch of cinnamon. I might even like them with a hint of shredded coconut. Try these and let me know what you think.
