My mom makes the non vegan version of this classic broccoli salad. It had always been one of my favorites. I loved it at BBQ’s or pot lucks and haven’t had it in a real long time. I was so excited that this dairy free recipe tasted so good! I hope you all enjoy it as much as I do.
3/4 cup raw cashews that have soaked overnight in water
1 cup unsweetened coconut milk
1.5 Tablespoon apple cider vinegar
1 Tablespoon Stevia granules
1/4 tsp salt to taste
4 cups raw broccoli cut into bite sized pieces
1/2 red onion diced
1/4 cup sunflower seeds
1/4 cup dried cherries or raisins
1 cup red grapes
Prepare the sauce. In a blender, mix the cashews, coconut milk, vinegar, Stevia and salt until well blended.
Blanch the broccoli in boiling for about 1 minute until bright green. Put in colander to drain and run cold water over the broccoli to stop from cooking. Drain well.
In large mixing bowl mix together the broccoli, sauce and remaining ingredients. Add salt to your liking.
You can add any type of seed to this salad. Maybe even throw in some walnuts. This should chill before serving.
