Like muffins? You will love these! My dad and daughter found this recipe from Forks Over Knives and made these for us one day. Ever since these have been our go to muffins for when we have a sweet tooth but don’t want all that refined sugar. Add blueberries or non-dairy chocolate chips.
4 ripe bananas
2 cups oats, ground into flour
1/2 cup unsweetened apple juice
1/2 cup unsweetened applesauce
2 tablespoons ground flax seeds
1 teaspoons ground cinnamon
1/2 tablespoon alcohol-free vanilla extract
1/2 tablespoon apple cider vinegar
1/2 tablespoon aluminum-free baking powder
1/2 teaspoon sodium-free baking soda
We make ours in silicone muffin cups in our cupcake pans and they never stick.
Preheat oven to 350. Ready your muffin liners in pan. Add all dry ingredients to large bowl. Puree bananas in a food processor ( We use the Nutribullet) until smooth. Add the apple juice, applesauce, extract and apple cider vinegar and blend again until all combined. Add the wet mixture to the dry ingredients and mix. This is where you’d add your optional ingredients like blueberries or non-dairy chocolate chips. Do not over mix. Pour into muffin liners about 2/3 full. Bake for 20-22 minutes until tops are golden brown and toothpick inserted in center comes out clean.
