This simple miso soup is so delicious and so quick and easy to make. I whip this up in 15 minutes! It is full of flavor and so satisfying. Miso soup is my new obsession. It makes my new vegan lifestyle that much easier, guys. For real! Let me share this simple recipe with you.
4 cups vegetable broth
2 cups water
1 package cubed tofu, extra firm
8 oz. mushrooms, sliced. I prefer shiitake when available!
1/4 cup fresh chives or green scallions, diced
Dash of black pepper
Dash of red pepper flake
Optional: a few basil leaves
Over high heat bring broth and water to a boil in pot. Once boiling add tofu and mushrooms and then turn heat down to simmer. In a bowl (I use the same Pyrex measuring cup that the broth was measured out in) whisk the miso paste and 1/4 cup of the hot broth together. Pour the mixture back into the broth pot. Simmer for 10 minutes. Add chives or scallions (both would be good too), black pepper, red pepper flakes and if you favor basil add that too. Serve and enjoy!!
