I have always loved broccoli cheddar soup. My dad and I are on a mission to find a recipe that replaces this old friend of ours. My dad found this recipe and I’ve adjusted it a bit. This one is our first attempt and it’s not bad!
head of cauliflower
4 cups low sodium vegetable broth
1 cup shredded carrot
1 gold potato
2-3 stalks celery
1/2 cup unsweetened plant-based milk
2 tablespoons lemon juice
1/2 cup nutritional yeast
1.5 tablespoons apple cider vinegar
1 teaspoon salt
1/4 teaspoon pepper
2 10 oz frozen bags broccoli
Pulse all vegetables except for broccoli in food processor and add to pot. Add 4 cups broth and bring to boil. Cook veggies until soft and blend using immersion blender. Stir in the plant-based milk. Add all other ingredients. Simmer until heated through. About 10 minutes.
