Finally some sunshine after a week of rain and I am inspired to bake! I know my family will appreciate something chocolate. Banana breads are one of our favorites, so how about chocolaty chocolate chip banana bread. I literally just made this and already one loaf is gone! I can’t leave these loaves unprotected around here!
1 1/4 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
.5 teaspoon baking powder
.5 teaspoon salt
1 cup coconut sugar
1 individual cup unsweetened apple sauce
2 rip bananas
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
1/2 cup dairy free chocolate chips
Preheat oven to 350. Grease 9 inch loaf pan with coconut oil and line with parchment paper to have overhang on both sides. Mix dry ingredients in a bowl. In another bowl mash bananas and mix in the applesauce, vanilla and apple cider vinegar. Add wet mixture to the dry and mix with hand mixer, add in chocolate chips. Pour into prepared loaf pan and bake for 40-45 minutes. Test with toothpick. Cool completely before slicing.
