Jambalaya In A Crockpot! (Vegan)

This one is easy and delicious! Slow cooker meals are perfect for middle of the week dinner options. It has been foggy and chilly this week. Something warming and spicy was in order.

1 onion, diced

2 celery stalks, diced

3 garlic cloves, minced

1 green bell pepper, diced

1 14 ounce can diced tomatoes

5 cups vegetable broth

2 tablespoons paprika

2 tablespoons ground cumin

2 teaspoons black pepper

1 teaspoon dried thyme

1 teaspoon dried oregano

2 tablespoons franks hot sauce (original)

2 cups long grain brown rice

1 14oz can dark red kidney beans

Field Roast Grain Meat Sausages, Mexican Chipotle, 12.95 Oz, sliced

2 bunch green scallions, chopped

Place everything but the rice, beans, meatless sausage and scallions into the slow cooker. Cook for 3 hours. Stir every half hour.  Add the rice, beans, meatless sausage and cook for another hour, stirring halfway in between. Top with scallions when serving.
