Roasted pumpkin seeds

I LOVE Fall. I love Halloween, scary movies, making costumes for my kids, decorating inside and out, hayrides, turmeric chai lattes, carving jack-o-lanterns AND roasting pumpkin seeds! We even pack them in school lunches.

Recipe:

pumpkin seeds from 1 pumpkin

1 tablespoons olive oil

1 teaspoon salt

1.5 teaspoon paprika

1.5 teaspoon chili powder

.5 teaspoon tablespoons garlic powder

Scoop the guts right out of your pumpkins and separate the seeds. Wash them thoroughly and spread out on paper towels to dry for a couple of hours.

Preheat oven to 300 degrees. Toss the seeds in the oil and spices. Spread them out onto a parchment paper lined baking sheet bake for 30 minutes, checking every 10 to make sure they don’t turn from golden to burnt. Mix and toss them up a bit as needed during your 10 minute checks.
