You can turn just about anything into “fries”. I am a huge fan of sweet potato fries so it’s no surprise I’d like carrot fries.
Recipe:
1 pound fresh carrots, peeled and cut into “fries”
2 teaspoons olive oil
.5 teaspoon Himalayan salt (or sea salt)
dash of pepper
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh tarragon
Heat oven to 450. Line baking sheet with parchment paper. Mix oil, salt & pepper into a large bowl. Add carrots to the bowl and toss until coated. Spread out onto the baking sheet, trying not to overlap as much as possible. Bake for 13-17 minutes, watching carefully. Sprinkle with the fresh herbs. So good!
