Dairy free chocolate chip & coconut banana bread


My family is big on quick breads. I could make a loaf and it will disappear that same day. I always double up on these kinds of recipes and if I’m feeling ambitious I’ll quadruple. You can always freeze them.


1 cup whole wheat flour

3/4 cup spelt flour

1/2 cup shredded unsweetened coconut

1/4 cup oats

2 1/2  teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4  teaspoon nutmeg

1/4 teaspoon cinnamon

1/4 teaspoon cardamom

1/8 teaspoon ground cloves

1/2 cup dairy free chocolate chips

1/4 cup maple syrup

1/4 cup non dairy milk

1 teaspoon vanilla extract

1 teaspoon lemon juice

3 ripe bananas smashed into moosh

3 teaspoon coconut sugar

1 individual cup of non sweetened applesauce

Preheat oven to 350 and line a 9×5 pan with parchment paper. whisk all of the dry ingredients in a large bowl including non dairy chocolate chips. In a separate bowl beat all of the wet ingredients with a hand mixer until well blended. Pour into the dry mix and beat again until completely mixed. Pour into pan and bake for 45-55 minutes. Watch carefully at the end and make sure to do the toothpick test to assure it’s done.
