Dairy free chocolate chip wheat pancakes

My son loves pancakes. Loves loves loves them. I made these with whole wheat flour, almond milk, applesauce in place of oil and dairy free chocolate chips. I’ve made a lot of vegan pancake recipes but this one has the best consistency and fluffiness that I have found.


1 cup whole wheat flour

1 cup spelt flour

1.5 tablespoon coconut sugar

1 tablespoon baking powder

pinch of salt

2.5 cups almond milk

1 teaspoon apple cider vinegar

1 individual cup of non sweetened applesauce

1 teaspoon vanilla extract

.5 cup dairy free chocolate chips

Combine and mix all of the dry ingredients in one bowl. in a separate bowl combine and whisk the wet ingredients. Add the wet mixture into the dry and stir until well mixed. stir in the dairy free chocolate chips.

Lightly wipe down your frying pan or griddle with coconut oil and heat over medium-high heat. I use 1/4 cup scoops per pancake. cook until golden and bubbles start to appear on the surface. Flip and cook for another couple of minutes, watching closely.
