Sunshine filled weekend mornings are one of my favorite times of the week. Sometimes I wake up and immediately feel inspired to make something fresh and healthy for my family instead of bowls of oatmeal.
This morning I was inspired to make these dairy free chocolate chocolate chip waffles and boy were we pleased that I did.
1 1/2 cups unsweetened almond milk
1 teaspoon apple cider vinegar
1 individual cup of unsweetened applesauce
1.5 teaspoon vanilla extract
2 tablespoons maple syrup
1/2 cup unsweetened cocoa powder
1 1/2 cups whole wheat flour
1/2 cup oats
1 tablespoon flaxseed meal
1/4 teaspoon salt
1 .5 teaspoon baking powder
2 tablespoons coconut sugar
1/2 cup dairy free chocolate chips
coconut oil for the waffle iron
Plug in your waffle iron. In a bowl, combine all of the wet ingredients. whisk until well mixed. In a separate bowl mix all of the dry ingredients until well combined. Add the wet ingredients to the dry and mix completely. When the waffle iron is ready lightly brush with coconut oil. I used 1/3 cup scoops of batter per waffle. Follow instructions of your waffle iron for cooking.
